I am Oswaldo Oliva, a proud Mexican, a professional chef, and Lorea is my life's project.
A decade of my life was devoted beyond the borders of Mexico, honing my craft within the hallowed kitchens of the world's gastronomic sanctuaries. However, the most crucial lesson of my career came while working at Mugaritz with Andoni Luis Aduriz. I learned that those of us who work in the hospitality industry also play significant roles in the realm of memory.
Since that enlightening juncture, I've been curiously drawn to the power food holds in transforming moments of enjoyment into lasting memories that accompany us throughout our lives.
I turned back to Mexico inspired by the work of esteemed professionals who have became my colleagues. I hold great admiration for Chef Enrique Olvera and his steadfast dedication to positioning Mexico prominently on the global gastronomic podium.
