HUMO SEASON

The HUMO season begins with a simple question: What is smoke for Mexico?
The answer unfolds in multiple narratives throughout the menu.

Smoke as geology: the volcanic regions of the country, where ash enriches the soil and enables agriculture of immense potential.

Smoke as ritual: copal, ceremonies, the collective memory of a people who have always cooked with fire.

Smoke as a global bond: the great volcanic vineyards of the world—from Etna to the Canary Islands—whose singular aromatic characteristics converse with Mexican landscapes.

The menu is designed as a story with its own rhythm. HUMO presents snacks to be eaten by hand, seasonal vegetables from mineral-rich soils, seafood, and a choice between two meats for the main course.

The finale precisely illustrates the Lorea universe: a familiar and comforting dessert —pineapple and corn— sharing the table with a second frozen dessert made from Pacific and Yucatán seaweed, accompanied by smoked Osetracaviar.
