I spent a decade away from Mexico learning my craft and cooked in some of the best restaurants in the world, but I found the most important lesson of my career while working at Mugaritz with Andoni Luis Aduriz.
I learned that those of us who work in hospitality are also important players in the universe of memory.
Ever since, I have felt a curious fascination with how easily food turns moments of enjoyment into lasting memories that stay with us for a lifetime.
I came back to Mexico inspired by the work of great professionals who are now my colleagues. I deeply admire chef Enrique Olvera and his conviction to give Mexico a place on the world’s gastronomic podium.
